Potato Salad…

The 4th of July isn’t the 4th without potato salad… This is a tried and true recipe that my mom taught me… and now I’m making it on my own…

You’ll use about half or so of a 10lb bag of red potatoes… Make sure to wash them well…

Let the potatoes cool… and then…

 

Now for the eggs…

About a dozen should do it… Make sure to salt your water, so the cooled eggs are easier to peel.

Get the rest of the ingredients together…

2 tablespoons of kosher salt, 1/2 cup chopped pickles (or more if you like), 1 cup mayo, 1/4 cup pickle juice…

For the best results, layer your eggs, potatoes…
