The Chicken Sandwich…

Tender, Moist Chicken… it’s a feat that many hope for a few achieve… you either cook it too long and you’re reduced to eating what you can only imagine shoe leather must taste like… or you cook it too little and it sits on your plate and you just push it around while opting for the mashed potatoes or peas…

Well this 4th of July (after an inspirational meal at Smash Burger  where we had the most tender, well seasoned chicken sandwhich ever) we decided it was time to give it a try for ourselves…

Here’s what you’ll need:

1 to 4 boneless skinless chicken breasts

Salt and ground pepper

1/4 cup flour

1/2 tablespoon butter (we used olive oil… more healthy… and dairy free)

(optional) freshly chopped herbs… might I suggest basil or parsely…

Tools:

10 inch suate pan with lid

1 meat tenderizer

Make sure you only lightly dredge them, no caking…

Now… heat your pan at medium-high heat… Add olive oil (or butter)… Let them melt… and then turn down to medium.

The chicken breasts should golden, not seared or browned… Turn heat to low…
