Goat cheese… what can I say I absolutely love the stuff. Since I can’t have regular dairy items (basically anything that comes from a cow, milk, cheese, butter, beef… real bummer I know) I have fallen in love with goat cheese.
You won’t use the whole package of goat cheese (for 4 pizzas you would use half dividing it between the pizzas) a little goat cheese goes a long way and remember it’s a rich flavorful cheese.
We added olives this time but we usually add either mushrooms or of late we’ve been favoring pecans.
Once the pizzas are our of the oven, toss the argula with gremolata olive oil or other fused or infused olive oil of your choice (basil, or garlic mushroom are just two suggestions)
