Guacamole & ‘Taco’ salad

So tonight we decided to enjoy a little taste of Mexico to our evening meal… and you can’t have a taste of Mexico without some guacamole can you?

Guacamole (adapted from Southern Living Farmers Market Cookbook: A Fresh Look at Local Flavor)

  • 3 ripe avocados
  • 2 tbsp. finely chopped red onion (shallot)
  • 2 tbsp fresh lime juice
  • 1 garlic clove
  • 1/4 tsp salt
 Directions:
  1. Cut avocado in half. Scoop pulp into a bowl, mash with a potato masher until slightly chancy. Stir in chopped shallot, garlic, salt and lime juice.
  2. Cover with plastic wrap, allow wrap to touch mixture, and let stand at room temperature. 30 minutes.
Naan chips... just slice up some naan bread, place on a lined baking sheet and pop them in the oven at 350F for 8 minutes.
