So tonight we decided to enjoy a little taste of Mexico to our evening meal… and you can’t have a taste of Mexico without some guacamole can you?
Guacamole (adapted from Southern Living Farmers Market Cookbook: A Fresh Look at Local Flavor)
- 3 ripe avocados
- 2 tbsp. finely chopped red onion (shallot)
- 2 tbsp fresh lime juice
- 1 garlic clove
- 1/4 tsp salt
- Cut avocado in half. Scoop pulp into a bowl, mash with a potato masher until slightly chancy. Stir in chopped shallot, garlic, salt and lime juice.
- Cover with plastic wrap, allow wrap to touch mixture, and let stand at room temperature. 30 minutes.
