Turkey, Goat Cheese & Strawberry Sandwich

We are well into the spring season here in the Carolina’s, and that means it’s time to introduce strawberries. You can have them on salads, desserts, sandwiches, or on their own. I’ve enjoyed them in many ways, but for this post we’re going to try them in a sandwich. I’ve never tried it, so this is definitely something new for this particular foodie.

This is an incredibly easy sandwich to put together. It was originally supposed to be a panini but since we don’t currently have a panini maker, we used our griddle.

Turkey, Goat Cheese, Strawberry Sandwich

Ingredients:

  • Two slices of bread
  • Fresh sliced strawberries
  • Sliced Turkey (or chicken if you prefer)
  • Fresh basil leaves (we used sweet basil and purple basil)
  • Sliced Mozzarella (we used goat mozzarella which is immense!)
  • Jam (Fig, red pepper whatever makes you happy)

Directions:

Butter each side of your bread. Spread your choice of jam on the inside of each slice. Place the bread butter side down on to your griddle (or panini maker.) Add the strawberries, mozzarella, sliced turkey and basil. Place second slice of bread jam side down. Cook until brown on both sides.

We added two little side dishes for our sandwiches since we had some pasta we’d been dying to try and some fresh asparagus that needed to be eaten (even though this particular foodie is not in love with asparagus… it’s a crime… I know.)

You can of course enjoy this delicious sandwich on it’s own, or add various side dishes that you love. The choice is yours!
