I was going to make my usual cheesecake with the gorgeous key limes I picked up the other day, but I didn’t have some of the ingredients. So, I made this quick version with Jello Cheesecake Pudding Mix and Graham Cracker Crumbs that are always in this foodie’s pantry. Add to that some fresh key lime juice and zest for a tropical experience!
Note: If you are adding key lime juice to this mix, make sure you’ve already juiced your key limes. This way you can subtract from the milk (or lactaid) the carton asks for, and add the lime juice. We learned this the lesson the hard way, as we had more ‘soup’ than ‘pudding.’
