Bruschetta… that’s what’s for dinner.

So you’ve had a long work week, filled with day after day of rain… and you want something easy to make for dinner. I give you one word.

Bruschetta.

The first thing you need is bread, it wouldn’t be bruschetta without it… You can slice your french baguette in 1/2 inch to 1 inch slices depending on how many you want to make.

Pre-heat your oven to 350F, and put together your toppings… Let’s get our green items together first…

Next we’ll get into the fruit/spread, veg, egg etc…

Spread goat cheese (or your creamy cheese of choice) onto your bread slices, and pop those babies in the oven for 5-8 minutes. Once your cheese is nice and creamy, time to add those toppings.

If you have speciality olive oils and balsamics, you are going to want to use them to make your meal even more savory/sweet.

Here are our Bruschetta creations from top (left) to bottom (right.)

  1. Orange Mint
  2. Olives
  3. Blood Orange Olive oil
  4. Rosemary
  5. Honey Walnut
  6. Blueberries (perfect with blueberry balsamic added)
  7. Spinach
  8. Ham
  9. Radish
  10. Fresh strawberry (our little plant is still give us a few strawberries here and there)
  11. Scrambled Egg & Chive
  12. Oregano (perfect with a little Gremolata EVOO on top)
  13. Cherry tomato
  14. Caramelized Garlic
  15. Sweet & Purple Basil

We made our selections by going around a letting each person pick one. It’s kind of fun hoping that someone else doesn’t pick the ones you have your eyes on.

Not only is this a really filling meal, it’s also a breeze to clean up. Just bag up those extra toppings, wash up the pan (if you were messy) and you’re done!
