That’s Just Peachy: Rustic Peach Tart

I love peaches, always have and always will. They are perfect summer fruit, (along with berries of course,) and so we decided it was time to try our hands at a peach tart.

First our simple ingredients:

  • 2-3 peaches (you saw that one coming, right?)
  • 1 tbsp. lemon juice
  • 1/4 cup fructose
  • 1 tbsp. cornstarch
  • 3 tbsp. peach (or) apricot jam

Garnish:

  • 2 tbsp. sanding sugar (we used pale yellow, gave a nice finish)
  • 1/4 cup slivered almonds

Pie Crust:

We used Jiffy Pie Crust that we sent through the food processor, but you can either make your own, or purchase ready made pie crusts.

Follow Directions below:

Mix up the dough.
Mix up the dough and roll it out.
Add fructose, cornstarch to sliced peaches...

Place peaches in the middle of the dough.

Fold up those edges.

Press in slivered almonds and dust with sugar.

Place in preheated oven (375F) for 60-75 minutes.

Remove from oven and allow tart to cool.
