We adapted our recipe from FoodieCrush’s Vegetarian Lasagna Soup. My grandfather is a meat and potatoes kind of guy, and no meat wouldn’t do.
I have to say that this is one of my favorite of all the slow cooker soups that we’ve made so far. Love Lasagna noodles, we used some thiner ones we’d picked up in Hickory towards the end of last year.
If you could get thinner lasagna noodles I would suggest it, because they will cook faster and more evenly. Also, I would recommend breaking them in half. We learned this little bit of information after we created the soup for the first time.
