This was the second meal we prepared in our ‘Dueling Chef’s Challenge.’ I created the Spicy Ponzu-Glazed Catfish from yesterdays post, and mum was in charge of the Chicken & Buttermilk Biscuit Sandwiches…

  • 2 Boneless, Skinless Chicken Breasts
  • 1 Cup Buttermilk Biscuit Mix (we subbed with Lactaid)
  • 1 Carrot
  • 1 Clove Garlic
  • 1 Bunch Collard Greens
  • 2 tbsp butter (we subbed with margarine)
  • 2 tbsp Mayo
  • 1 tbsp Honey
  • 1 tbsp Hot Sauce
  • 1 tbsp Apple Cider Vinegar
  • 1/4 cup Buttermilk

Our Review: This was our favorite dish out of the three recipes in our first box. It also marked our first time trying collard greens. While they were interesting, I’m still not a fan though…

All the flavors in this dish married together well, and I have a feeling were going to make something similar in future. Delicious!
