Chicken Caprese with Warm Spinach Salad | Plated

As I’m sure you’re beginning to notice, we are trying out different foodie delivery services. We’re trying a box of each and then we’ll decide which one’s we’ll keep getting deliveries from.

I have been hearing good things about Plated for quite awhile, so I was beyond excited when our first box arrived. The first dish we made was the Chicken Caprese with Warm Spinach Salad (obviously, it is the title of the post after all!)

Items in the box:

  • Basil
  • Cherry Tomatoes
  • Shallot
  • 4 oz Fresh Mozzarella Cheese
  • 2 Boneless Skinless Chicken Breasts
  • 1 packet Champagne Vinegar
  • 1 packet Dijon Mustard
  • 3 oz Baby Spinach
  • Flour
  • Panko Breadcrumbs
  • Grated Parmesan Cheese

Mum enjoyed her salad with the fresh mozzarella, I added fresh goat cheese to mine. It was absolute perfection, and although I’m not a vinaigrette person, this vinaigrette was absolutely delicious, and I can’t wait to make this dish again!
